Pesto-White Wine Poached Tilapia
This recipe uses pesto to flavor tomatoes and tilapia poached in chicken stock and white wine. Keep individually wrapped tilapia filets in your freezer and you can get dinner on the table in just over 30-minutes.

  1. Place cherry tomatoes and pesto in dutch oven. Heat on medium until tomatoes are soft (approximately 5-minutes).
  2. Place frozen tilapia filets on top of tomatoes.
  3. Add broth and wine to dutch oven and bring to a light boil on medium-high heat.
  4. Turn heat down to low, cover the dutch oven, and poach the fish for 30-minutes or until heated through.
