Lemon Caper Tuna Steak
After returning home from a recent vacation, I was craving a home cooked, healthy meal. Hot summer temperatures inspire me to explore Mediterranean cuisine. I love chicken piccata, but was in the mood for something lighter. My refrigerator and pantry were quite bare after vacation, but I decided to dig around to see what I could create. Lemons add such a great flavor and I use them often when I cook. Luckily I had one on hand and I had tuna steaks in the freezer so I decided to try a Lemon Caper Tuna Steak dinner.
I find it helpful to keep a few items in my freezer and pantry for meal emergencies like this. I pulled the tuna and green beans from the freezer. A great start. I always have chicken stock on hand and rice in the pantry. Finding a can of artichokes was a bonus. I use these and capers in salads quite often, so usually have cans or jars on hand.
This meal comes together quickly, about 30-minutes. Our lemon caper tuna steak dinner took a little longer to prepare because I used brown rice, which has a longer cooking time. YUM! Absolutely delicious.
Lemon Caper Tuna Steaks with Artichoke Hearts
Ingredients
- 4 tuna steaks
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 shallot minced
- 1/2 cup chicken broth
- 1/4 cup dry white wine optional
- 1 16 oz. can artichoke hearts
- 1 cup green beans
- salt to taste
- pepper to taste
- 1 lemon zested
- 2 tsp capers
Instructions
- Place non-skillet over medium-high heat
- Add tuna steaks and sear approximately 3 minutes on each side
- Remove tuna steaks and set aside
- Add olive oil to skillet and place over medium heat
- Add garlic and shallot to skillet and heat until garlic is fragrant
- Add broth and wine and heat over medium flame until liquid is warm, approximately 4-5 minutes
- Add artichoke hearts, green beans, lemon zest, lemon juice and capers. Heat until vegetables are warm
- Add tuna steaks to skillet and warm
- Place tuna steaks on plate and cover with lemony, caper sauce. Enjoy!
