Korean Beef Rice Bowls
This recipe for Korean Beef Rice Bowls was a great find from Alyssa at The Recipe Critic. The recipe is easy to prepare and the ingredient list isn’t too crazy with lots of exotic ingredients that you might not have in your pantry. I like to buy a tube of crushed ginger so I always have it on hand for last minute dinner plans or when fresh ginger isn’t available. It’s also a great idea to add a bottle of sesame oil to your pantry. A wonderful ingredient for almost any stir fry dish.
The Korean Beef is certainly delicious with jasmine rice, but it also tastes great over riced cauliflower or zucchini noodles if you are trying to reduce carbs. I have even eaten this over canned green beans. Just make sure to leave out the brown sugar. Still tastes great.
Ikea Meatball Stroganoff with Hashbrowns
Keep a bag of Ikea or other frozen meatballs in the freezer and you can throw together a delicious meal in a hurry. Ikea Meatball Stroganoff tastes great with hash browns. You can also serve this dish with egg noodles; a more traditional approach.
Avigolimono Soup (Lemon chicken soup)
The Avigolimono Soup recipe from Kristy at The Wicked Noodle provides a simple recipe for a delicious, creamy, flavorful and filling soup. I make this soup several times each winter. The soup warms me up on the inside and the lemon flavor makes me think of summer days. A Dutch Oven is perfect for preparing this recipe stovetop.
Dump and Bake Mac-and-Cheese
This is my go to Macaroni and Cheese recipe. Throw the ingredients in a pot before your crazy day gets started. Let it sit in the refrigerator all day and pop it in the oven about an hour before you’re ready to eat. Relax and enjoy dinner.
This makes a great side dish for the herbed pork recipe below. You can also add bacon, prosciutto and/or vegetables just before baking for a hearty one-dish meal.
Instant Pot Chili
An instant pot is a great tool to get dinner on the table fast. I’m not a fan of leaving food in a slow cooker when I’m away from home all day. I have tried a number of Instant Pot Chili recipes and this one never lets me down. Check out my favorite Instant Pot Chili recipe below from Dinner at the Zoo.
Cheesy Chicken Taco Pasta
Get dinner on the table in about 30-minutes with this Cheesy Chicken Taco Pasta recipe from Karly at Buns in My Oven. The Roth GranQueso cheese looks fantastic, but it wasn’t something I had on hand. I substituted Kraft Mexican Stule Four Cheese Shredded mix.
This delicious skillet dinner provides a little bit of spice if you choose to use jalapeño peppers. You can replace with poblano or green bell peppers to take the heat down a level or two. I love the combination of corn with the pasta. An unexpected twist.
Parchment Paper (Enpoupoullie) Fish
I always have shrimp and individually wrapped fish filets in the freezer. Easy to thaw, can adjust the quantity easily and get a great dinner together in a hurry. I love to use this parchment paper cooking technique to poach seafood with vegetables. No parchment paper? No problem. You can use foil.
Here’s a recipe for Tilapia Enpoupoullie. Here I steamed sliced peppers with the fish. You can mix up the vegetables or use shrimp in place of the fish. Delicious. An easy recipe that you can mix up enough so no gets bored with dinner.
Instant Pot Jambalaya
I love southern food, from raw oysters, to fried okra and gumbo. When you crave southern food try out this recipe for Instant Pot Jambalaya from Toni at Boulder Locavore. The andouille sausage, shrimp, rice and vegetables will satisfy your craving and its easy and quick enough to pull together on a weeknight in about 35-minutes.
Herbed Pork Loin
This easy Herbed Pork Loin recipe from Beth at Budget Bytes has become a meal staple in our home. You can vary the herbs and serve with a side of mashed potatoes, Mac and cheese, vegetables or a nice salad.
I recommend using a prepared herb rub to save time. I love to make this on my Le Creuset grill pan. A splurge birthday gift for myself, but I use it often.
Tender & Juicy Air Fryer Chicken Breasts
These delicious chicken breasts can be served with a salad and steamed vegetables for an easy, healthy meal. The recipe can be found at a Pinch of Healthy. Love my Air Fryer, but I have to confess I am running out of storage space in my kitchen.

Being the home cook in the family I want to find easy recipes to serve during our vacation. I found these recipes very helpful particularly the Instant Pot Jambalaya mostly due to how easy and nutritious it is. Having recipes that are easy to prepare while still being delicious would help us relax and enjoy our vacation more.
